Pumpkins! Pumpkins everywhere! In North America, pumpkins are a welcome symbol of the fall season. You can find pumpkins stacked high at every grocery store, at the farmers market, and at local road side pumpkin patches.

The seeds inside the pumpkin make a healthy snack! Nutritionists love pumpkin seeds because they contain fiber, healthy fats, protein, and several essential vitamins in such a small tasty package.

Preparing Pumpkin Seeds:

Pumpkin seeds will need to be separated from the flesh of the pumpkin before toasting. All of the orange web-like flesh can be washed away. We recommend washing the seeds in a colander under cold water and gently turning the mixture with your hands to make sure all of the flesh is removed.

Place the seeds in a large pot with 1 teaspoon of salt and plenty water to boil the seeds without them sticking together. Boil the seeds for 10 minutes, then strain off the boiling water.

Seasoning Pumpkin Seeds:

In a large bowl, place your boiled sunflower seeds and prepare them with the seasoning of your choice. Mix the seeds and the flavoring together well, distributing the seasoning evenly.

2 tsp – Parmesan crumbles (sprinkle on directly after toasted seeds are removed from the oven)

Sweet Honey Pumpkin Seeds
1 tbsp – vegetable oil or sunflower oil
1/4 tsp – sea salt
2 tbsp – natural honey

Vanilla Almond Pumpkin Seeds
1 tbsp – vegetable oil or sunflower oil
1/4 tsp – sea salt
1 tsp – vanilla extract
1 tsp – almond extract
1 tsp – powdered sugar

Pumpkin Spice Pumpkin Seeds
1 tbsp – vegetable oil or sunflower oil
1/4 tsp – sea salt
1/2 tsp – pumpkin pie spice

Bourbon and Brown Sugar Pumpkin Seeds
1 tbsp – vegetable oil or sunflower oil
2 tbsp – bourbon
1 tsp – brown sugar
1/4 tsp – sea salt
1/4 tsp – ground cinnamon (optional)

Baking the Pumpkin Seeds:

Line a baking sheet with parchment paper and spread the seasoned pumpkin seeds out into an even single layer. For the best results, avoid allowing seeds to pile and stick together.

  • Bake the seeds at 325 degrees for about 15-20 minutes, until they are golden brown.
  • Allow the seeds to cool and enjoy. Store your toasted pumpkin seeds in a sealed container.
